I never use to be a big fan of tomatoes. I picked them out of my salad, ordered sandwiches without. I started to come around to the tomato in college. I took baby steps with pico de gallo and bruschetta. My full on love affair with tomatoes didn't happen until this summer. My mother in-law grew a bunch in her garden and served them up with every meal. This is when I realize just how fabulous tomatoes are. This recipe is hers with a couple of tweaks from me. I'm going to give you the measurements that I used but it really depends on your taste.
Dry Ingredients
1 Tbsp Oregano
1 Tbsp Parsley
1 Tsp Salt
A Ton of Black Pepper
A Handful of Fresh Basil- Chopped
A Few Cloves of Garlic- Thinly Sliced
Wet Ingredients
2 Tbsp Vegetable Oil
1/2 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
The Show Stealer
I used 2 packages of grape tomatoes sliced in half
You can use any kind you want.
It taste best with tomatoes fresh from the garden
Combined all ingredients and refrigerate over night. Stir and Enjoy!
